Hey neighbor.

Even today in Europe "corn" means grain, and "maize" means corn. So it probably meant wheat bread.

Yes, that is likely true of the 1912 publication by Knoop. Though I don't know that we can say for certain that it is wheat bread either. Many of the small grains served, of course, and bakers were conversant in using more than one kind of grain if only to be able to bake when one crop or another was unavailable. Isn't it fun how deep we can dive into a topic if we have the inclination? Thanks for the comment neighbor!
